Jessie's Clam Chowder

A warm and hearty clam chowder recipe inspired by the Boxcar Children's adventures on Surprise Island.

Ingredients

  • 1 slice bacon, diced
  • 1 small onion, chopped
  • 1 cup peeled cubed potatoes
  • 2 cups water
  • 1 can (6 1/2 ounces) minced clams
  • 2 cups milk
  • 3 Tablespoons margarine, melted
  • 2 Tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook bacon in the large saucepan over low heat until crisp.
  2. Add onion and cook until it is soft.
  3. Carefully add potatoes and water. Turn the heat up to high and bring to a boil. Turn the heat down to medium and cook until the potatoes are done. This should take about 20 minutes.
  4. Add clams and cook 2 minutes.
  5. Add milk and cook 5 minutes.
  6. Mix melted margarine, flour, salt, and pepper together. Add to the chowder. Cook, stirring constantly until the chowder is thick and hot. Serve immediately.
