Ingredients

  • Red cabbage
  • Green onions
  • Carrots
  • Ginger
  • Shrimp
  • Ground chicken
  • 1 egg
  • Soy sauce
  • Rice paper wrappers
  • Cooking oil
  • Dipping sauce (for serving)

Instructions

  1. Finely chop red cabbage, green onions, carrots, and ginger.
  2. Chop the raw shrimp into small pieces.
  3. In a large bowl, combine the chopped red cabbage, green onions, carrots, ginger, chopped shrimp, ground chicken, the egg, and a splash of soy sauce. Mix all ingredients thoroughly to create the dumpling filling.
  4. Prepare the rice paper wrappers by cutting circular sheets in half.
  5. Moisten a paper towel and place two half-circle rice paper pieces on it, slightly overlapping.
  6. Place a spoonful of the filling mixture onto the center of the overlapping rice paper.
  7. Fold the right side of the rice paper over the filling.
  8. Fold the top tip of the resulting shape over.
  9. Fold the left side of the rice paper over.
  10. Carefully pick up the partially folded dumpling and flip it over, pressing gently to seal the edges and form a compact dumpling. Repeat this process for all remaining filling and wrappers.
  11. Heat a small amount of cooking oil in a non-stick pan over medium heat.
  12. Place the formed rice paper dumplings into the hot pan, ensuring not to overcrowd it. Cook until golden brown and crispy on one side, then flip and cook until golden brown and cooked through on the other side.
  13. Remove the cooked dumplings from the pan and serve hot, ideally with a side of your favorite dipping sauce.
