GRILLED CHICKEN WITH SWEET POTATO & LIME SAUCE
The sauce is a vivid blaze of yellow-orange and the chicken is exquisitely tender. For a change, prepare the recipe through the middle of step 3 but leave the vegetable mixture unpureed. Cube the grilled chicken and combine with the vegetables.

Ingredients
- juice of 1 lime
- juice of 1/2 orange
- 1/2 tsp each turmeric, cumin, and coriander
- salt and freshly ground black pepper
- 4 boneless, skinless chicken breasts
- 2-3 garlic cloves, crushed
- 1in (2.5cm) piece of fresh ginger, crushed
- 2 cardamom pods, lightly crushed
- 4 scallions, sliced
- 1/2 tsp each cumin, turmeric, and ground coriander
- 1lb (500g) orange-fleshed sweet potato, peeled and diced
- 1 3/4 cups (300ml) stock
- juice and zest of 1/2 lime
- few drops of lemon juice
- chopped fresh cilantro, to garnish
Instructions
- Rub the juices, spices, and salt and pepper into the chicken. Marinate while making the sauce.
- To make the sauce, sauté the garlic, ginger, cardamom, scallions, spices, and sweet potato in a covered pan for 7–10 minutes. Uncover and cook for 3–5 minutes, until the vegetables are tender. Discard the cardamom.
- Add the stock, lime juice and zest, lemon juice, and salt and pepper. Process in a blender or food processor, then push through a sieve, discarding the solids.
- Grill the chicken in a grill pan for 2–3 minutes, then finish in a preheated oven for 6–7 minutes. Reheat the sauce, taste, and adjust the seasoning. Spoon onto plates, put the chicken on the sauce, and garnish with the cilantro, and with spikes of chives, if desired.
