Ingredients

  • Milk (for chocolate syrup)
  • Cocoa powder (for chocolate syrup)
  • Salt (for chocolate syrup)
  • 1 cup (240 ml) water (for pistachio prep)
  • Pistachios
  • 3 tablespoons milk (for pistachio cream)
  • Powdered sugar (for pistachio cream)
  • Melted butter (for pistachio cream)
  • Salt (for pistachio cream)
  • Boiling water (for cappuccino)
  • Instant coffee
  • 1/4 cup (30 g) confectioners' sugar
  • Ice
  • Milk (for cappuccino base)
  • Chocolate chips
  • Roasted walnuts (optional)
  • Whipping cream
  • 1 teaspoon sugar (optional)
  • Orange (for sprinkle/garnish)
  • White chocolate shavings

Instructions

  1. To make the chocolate syrup: In a small bowl, whisk together the milk, cocoa powder, and salt until smooth. Transfer to a squeeze bottle.
  2. To make the pistachio cream: In a small pot, bring 1 cup (240 ml) of water to a boil over high heat. Once boiling, add the pistachios and boil for 1 minute, then remove the pot from the heat and let the pistachios sit in the water for 5 minutes. Drain the pistachios, transfer to a clean tea towel, and rub with the towel to remove the peels. Discard the peels.
  3. Transfer the prepared pistachios to a food processor and add 3 tablespoons milk, powdered sugar, melted butter, and salt. Process until a smooth and creamy mixture. Transfer to a second squeeze bottle.
  4. To make the frozen cappuccino: In a small bowl, pour in the boiling water, add the instant coffee and 1/4 cup (30 g) confectioners' sugar and stir until dissolved. Transfer to a blender and add the ice, milk, chocolate chips and roasted walnuts (if using) and blend until the ice is smooth in texture.
  5. To make the whipped cream: In a medium bowl, combine the whipping cream and 1 teaspoon sugar (if using). Using a handheld electric mixer with a whisk attachment, whip the cream, starting on low and gradually increasing to medium-high, until stiff peaks form, about 3 minutes.
  6. To assemble: Using a squeeze bottle, drizzle chocolate syrup in random swirls inside the glasses. Pour the frozen cappuccino equally between the glasses, then top both drinks with a dollop of whipped cream and a drizzle of chocolate syrup and pistachio cream to taste.
  7. Garnish with a sprinkle of orange and white chocolate shavings. Add a straw and serve immediately.
