An elongated version of cream puffs, filled and frosted with chocolate glaze.

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • Whipped cream or pudding (for filling)
  • Chocolate Glaze (recipe on page 135)

Instructions

  1. Prepare the dough as for Cream Puffs (using 1 cup water, 1/2 cup butter, 1/4 teaspoon salt, 1 cup all-purpose flour, 4 eggs). Spoon dough into a decorating bag fitted with a large plain round tip (about 1/2-inch opening).
  2. Pipe 12 strips of dough, 3 inches apart, onto a greased baking sheet, making each strip 4 inches long, 1 inch wide, and 3/4 inch high.
  3. Bake, split, and cool as for Cream Puffs (in a 400°F oven for 30 to 35 minutes).
  4. Fill éclairs with whipped cream or pudding.
  5. Frost with 1 recipe Chocolate Glaze (refer to page 135 for glaze recipe).
