Char Siu Foo Yung
A beautiful and classic Chinese egg dish featuring savory barbecued pork and crisp mung bean sprouts.

Ingredients
- 3 eggs
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- About 3 tablespoons cooking oil
- 2 ounces julienned Chinese barbecued pork (char siu)
- 1/4 cup julienned carrot
- 3 ounces fresh mung bean sprouts
- Cilantro sprigs
Instructions
- Lightly beat the eggs, sesame oil, salt, and pepper in a bowl.
- Place a nonstick frying pan over high heat until hot. Add 1 tablespoon of the oil, swirling to coat the sides. Add the barbecued pork and carrot; stir-fry for 1 minute. Add the bean sprouts and stir-fry for 30 seconds.
- Push the vegetable mixture to one side of the pan. Add the remaining 2 tablespoons of oil to the pan, swirling to coat the sides.
- Add the egg mixture and cook without stirring. Spread the vegetable mixture back into the center of the pan.
- If the mixture starts to stick, add a teaspoon or two of oil. As the edges begin to set, lift with a spatula and shake or tilt the pan to let the eggs flow underneath.
- When the eggs no longer flow freely, turn the omelet over and brown lightly on the other side.
- Garnish with cilantro sprigs.
