Blueberry Cobbler

Ingredients

  • 1/3 cup unsalted butter
  • 1 cup self-rising flour
  • 1/2 cup granulated sugar or firmly packed light brown sugar
  • 1 cup whole milk
  • 4 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Place the butter in an 8- by 11-inch baking dish and put in the oven to melt.
  2. Whisk the flour and sugar together in a small bowl until thoroughly combined, at least 30 seconds. Whisk in the milk. Remove the hot pan from the oven and pour the batter onto the hot butter. Sprinkle the blueberries over the top of the batter.
  3. Bake the cobbler for 35 to 40 minutes, or until the batter has risen around the fruit, the top is light brown, and the edges are brown. The cobbler is done when a toothpick inserted in the center of the cobbler comes out clean (avoiding a blueberry). Serve warm. The cobbler can be made ahead, refrigerated, and reheated before serving.
