AGEDASHI TOFU
This is the favorite dish of Iwaizumi, vice captain of the volleyball team from Haikyuu!!. The agedashi tofu is soft with a fried crispy exterior and served with a sweet and salty sauce.

Ingredients
- 1 package (12 ounces, or 340 g) soft tofu
- Canola oil, for frying
- 1/2 cup (95 g) potato starch
- 1 pinch salt
- 2 1/2 tablespoons soy sauce
- 2 1/2 tablespoons mirin
- 1/2 teaspoon dashi powder
- 1/2 teaspoon granulated sugar
- 1 tablespoon cold water
- 1 teaspoon potato starch
- 1/4 cup (40 g) grated daikon radish, drained
- 2 green onions, green parts only, thinly sliced
- 1/4 cup (3 g) bonito flakes
- Steamed rice
Instructions
- Cut the soft tofu into bite-sized cubes.
- In a shallow bowl, mix the potato starch with a pinch of salt and lightly coat the tofu cubes.
- Heat canola oil in a frying pan and fry the tofu until the exterior is crispy and pale golden.
- In a small saucepan, combine the soy sauce, mirin, dashi powder, and sugar; bring to a simmer.
- Mix 1 tablespoon of cold water with 1 teaspoon of potato starch and stir the slurry into the sauce until it thickens.
- Serve the fried tofu over steamed rice, drizzled with the sauce and garnished with grated daikon, green onions, and bonito flakes.
