AGEDASHI TOFU

This is the favorite dish of Iwaizumi, vice captain of the volleyball team from Haikyuu!!. The agedashi tofu is soft with a fried crispy exterior and served with a sweet and salty sauce.

Ingredients

  • 1 package (12 ounces, or 340 g) soft tofu
  • Canola oil, for frying
  • 1/2 cup (95 g) potato starch
  • 1 pinch salt
  • 2 1/2 tablespoons soy sauce
  • 2 1/2 tablespoons mirin
  • 1/2 teaspoon dashi powder
  • 1/2 teaspoon granulated sugar
  • 1 tablespoon cold water
  • 1 teaspoon potato starch
  • 1/4 cup (40 g) grated daikon radish, drained
  • 2 green onions, green parts only, thinly sliced
  • 1/4 cup (3 g) bonito flakes
  • Steamed rice

Instructions

  1. Cut the soft tofu into bite-sized cubes.
  2. In a shallow bowl, mix the potato starch with a pinch of salt and lightly coat the tofu cubes.
  3. Heat canola oil in a frying pan and fry the tofu until the exterior is crispy and pale golden.
  4. In a small saucepan, combine the soy sauce, mirin, dashi powder, and sugar; bring to a simmer.
  5. Mix 1 tablespoon of cold water with 1 teaspoon of potato starch and stir the slurry into the sauce until it thickens.
  6. Serve the fried tofu over steamed rice, drizzled with the sauce and garnished with grated daikon, green onions, and bonito flakes.
